Rice with Essence of Orange

Rice with Essence of Orange
This delightful rice recipe reminds me of summer with it's bright citrusy flavor. 

1/4 cup rice vinegar
1/4 cup orange juice
2 tablespoons maple syrup (preferably pure maple syrup)
1 teaspoon ground ginger
1 teaspoon chopped fresh cilantro
1 clove minced garlic
1-2 drops sesame oil
1/4 teaspoon red pepper flakes
water
1 cup rice
  1. Combine all of the ingredients except the rice in a 2-cup measuring cup. 
  2. Add enough water to make 2 cups of liquid.
  3. Pour all liquid into a a medium sauce pan. Bring to a boil.
  4. Add rice to the liquid, return to boil, reduce heat, cover, and simmer over low heat for 20 minutes (or until rice is done).
