Roasted Artichokes
This healthy, hearty and wholesome vegetable side dish goes with most roasted or grilled meals.
1 package frozen artichokes, defrosted (or 8 small artichokes quartered)
4-6 cloves garlic, peeled and sliced 1 small coarsely chopped purple onion 6-8 large mushrooms, quartered |
1 tablespoon olive oil
1 tablespoon chopped fresh sage freshly ground pepper to taste |
- Pre-heat oven to 350 degrees. Line a baking sheet with foil.
- Combine all ingredients in a large bowl, coat vegetables with oil.
- Bake 50 minute, stirring every 10-15 minutes.
- This can also be grilled.
