Roasted Delicata Squash Rings serves 4

Baked Delicata Squash Rings
Serve these wonderful, easy to make squash rings instead of french fries or sweet potato fries. They would also make a fantastic side dish for most autumn meals.
- Save the seeds, coat them with a little olive oil, and toast them. Salt to taste while still warm. They make a great snack.
1 delicata squash
1/2 tablespoon olive oil salt and pepper to taste |
- Pre-heat oven to 425°.
- Slice squash into 1-inch slices. (No need to peel the squash.)
- Remove seeds from slices and discard end pieces.
- Lightly brush slices with oil using pastry brush or place sliced squash into bowl and toss them with oil.
- Season with salt and/or pepper to taste.
- Arrange squash on baking sheet and roast about 20-25 minutes.
- Squash should be crisp on the outside.
