Roasted Garlic Couscous

Roasted Garlic Couscous
With its beautiful golden color, this couscous is both a treat for the eye as well as the taste buds. Follow any of the methods of roasting garlic in Becky's Tips.

1 cup couscous
1-1/2 cups water
1 roasted garlic bulb, peeled and chopped
1-1/2 tablespoons olive oil
  1. Pour couscous and water into a glass microwave safe bowl.
  2. Cook on high for 3-1/2 minutes.
  3. In a small bowl mix chopped garlic and oil.
  4. Fluff with a fork and mix garlic oil into couscous, stirring well.
