Roasted Mint Chicken
A wonderful summery scented and flavored chicken. Mint is a wonderful herb that most people think of as just a tea. It adds a fantastic fresh taste to chicken.
1 whole chicken
2 tablespoons honey 1 lemon 2-3 mint sprigs 2-3 cloves whole |
1/4 cup chopped fresh mint
2 tablespoons minced garlic 1 tablespoon olive oil |
- Pre-heat oven to 350 degrees.
- Remove giblets, rinse chicken, and pat dry.
- Heat a small saucepan over medium heat, stir in 1-1/2 tablespoons fresh lemon juice and honey.
- Place the leftover lemon along with the mint sprigs and whole garlic into the chicken cavity.
- In a small bowl, combine the chopped mint, minced garlic and olive oil.
- Using a knife, gently separate the skin from the breast, back and legs of the chicken.
- Spread some of the mint/garlic mixture under the loosened chicken skin. Rub the rest of the mixture over the outside of the entire chicken.
- Pour some of the warm honey and lemon juice under the loosened chicken skin. Baste the chicken with some of the sauce and reserve the rest of the sauce for basting.
- Turn the chicken over and place the chicken breast side down in a shallow roasting pan.
- Roast uncovered for 45 min.
- Turn chicken over, baste with reserved sauce, put meat thermometer in chicken thigh, and continue roasting for an additional 50-55 min. or until meat thermometer reaches 180 degrees.
- Take chicken out of oven when finished roasting. Baste with pan juices.
- Cover with foil. Let sit for 10-15 min. before carving.
