Savory Mashed Potatoes serves 4

Savory Mashed Potatoes
These savory mashed potatoes have sauteed onions and garlic for added flavor. We like to leave the potato peels on the potatoes to give these mashed potatoes a bit of a rustic feel and more texture. 

5 small potatoes, scrubbed and cubed (peeled if you wish)
1 cup finely chopped onions
2 cloves minced garlic
1/2 cup low-fat milk (or enough for desired consistency)
1/4 cup olive oil
  1. Place potatoes in large pot, cover with cold water and boil until tender.
  2. In large saute pan, heat oil over medium-low and saute onion and garlic until onion is tender. Stir often making sure onion doesn't brown, this will take about 15-20 minutes. The onion mixture will begin looking watery.
  3. Drain potatoes, into a large bowl, add onions, and mash together.
  4. Add milk, mashing well. (You can also use an electric mixer to mash.)
