Soft Tacos
serves 4

Soft Tacos
These soft tacos are a perfect way to use leftover chicken, pork or steak. They make a very flavorful and healthy lunch or dinner.

12 ounces cooked chicken, pork or steak
2 cups thinly sliced lettuce
1/4 cup chopped cilantro
1/2 cup salsa
12 corn tortillas
  1. Using two forks, shred the leftover meat.
  2. In a medium sized bowl, mix the lettuce and cilantro well.
  3. Completely wrap 4 tortillas in two slightly damp paper towels. 
  4. Heat the tortillas in a microwave oven on high heat for 20-30 seconds.
  5. Remove tortillas from microwave, separate the tortillas immediately.
  6. Fill each tortilla with 1-ounce of the meat, salsa and lettuce.
  7. Repeat until all tortillas are filled.
