Spinach and Tomatoes
This is a wonderful vegetable side dish that just might get your kids to eat spinach.
1/2 tablespoon olive oil
1/2 cup chopped onion 2-3 cloves chopped garlic 1 can (14.5 ounce) diced no salt added tomatoes, drained |
1 (10 ounce) package frozen spinach, thawed and squeezed dried
1/4 cup feta cheese 1/4 cup shredded Parmesan cheese |
- Heat oil in large skillet over medium heat.
- Saute onion and garlic until tender.
- Add tomatoes and spinach, heat through.
- Stir in both cheeses, heat until it begins to melt.
- You can use 1 bunch of fresh spinach and 2 diced tomatoes in place of the frozen spinach and canned tomatoes.
