Spinach and Tomatoes

Spinach and Tomatoes
This is a wonderful vegetable side dish that just might get your kids to eat spinach.

1/2 tablespoon olive oil
1/2 cup chopped onion
2-3 cloves chopped garlic
1 can (14.5 ounce) diced no salt added tomatoes, drained
1 (10 ounce) package frozen spinach, thawed and squeezed dried
1/4 cup feta cheese
1/4 cup shredded Parmesan cheese 
  1. Heat oil in large skillet over medium heat.
  2. Saute onion and garlic until tender.
  3. Add tomatoes and spinach, heat through.
  4. Stir in both cheeses, heat until it begins to melt.
  • You can use 1 bunch of fresh spinach and 2 diced tomatoes in place of the frozen spinach and canned tomatoes.
