Steamed Cod
serves 4

Steamed Cod
Incredibly flavorful cod that is both easy and healthy. This is an excellent fish recipe that gets rave reviews. 

1 pound cod (or other firm white fish like halibut)
1 tablespoon lemon juice
6-8 cups water
1/4 cup celery leaves
1/4 cup parsley
3 bay leaves 
10 allspice berries
1/4 teaspoon paprika
1/8 teaspoon cloves
1/8 teaspoon dry mustard
1/8 teaspoon fresh ground black pepper
1 tablespoon melted butter (optional)
  1. Cut fish into 4 portions. Thaw if frozen.
  2. Squeeze lemon juice over fish and set aside.
  3. Pour water into a large pot. 
  4. Add celery leaves, parsley, bay leaves, allspice, paprika, cloves, dry mustard and black pepper. 
  5. Bring water, herbs and spices to a boil.
  6. Place fish in steaming basket. 
  7. Set basket above the water. (It shouldn't touch the boiling water.)
  8. Cover pot with tight fitting lid. Steam fish 8-10 minutes, fish should flake easily with a fork.
  9. Arrange fish on serving platter, pour butter over fish if using. Top with additional parsley if desired.
  • If you don't have a large pot with steaming basket and cover, you can use a steaming basket in a large saute or frying pan with a cover. You will have to adjust the amount of herbs and spices according to how much water you are using.
