Stuffed Mushrooms
Wonderful tasting stuffed mushrooms that are great for entertaining.
8 large mushrooms
1/4 cup chopped onions 2 cloves chopped garlic 1 tablespoon chopped green bell pepper |
2 tablespoons softened low-fat cream cheese
1/4 cup non-fat plain Greek style yogurt 1/4 cup shredded cheddar cheese |
- Pre-heat oven to 375 degrees.
- Wash the mushrooms and thoroughly dry. Then remove the stems from the mushroom caps.
- Chop the stems and place them in a small bowl.
- Add the onions, garlic, green bell pepper, cream cheese, yogurt and grated cheese, mixing well.
- Place mushrooms on a baking dish coated with cooking spray.
- Spoon filling into each mushroom cap.
- Bake for 10-15 minutes, serve warm.
