Summer Fish Fillets
A fantastic light and easy summer dinner. This wonderfully aromatic sauce works beautifully with cod, haddock, snapper, sole and salmon.
1 pound fish fillet (cut into 4 portions)
1/2 cup white wine 1/2 cup water 1/2 tablespoon chopped fresh thyme 1 bay leaf |
1 clove minced garlic
1/4 cup olive oil 1-1/2 tablespoons lime juice salt to taste |
- In a large skillet, bring the wine, water, thyme and bay leaf to a low simmer. (Do not boil or it will cook the fish to quickly.)
- While liquid is heating, in a small bowl, combine garlic, olive oil, lime juice and salt. Set aside.
- Place fish in the simmering liquid, cover pan and cook 7 minutes per-inch of thickness.
- Remove fish from pan, place on serving dish and spoon sauce over fish before serving.
