Sweet and Sour Pineapple Chicken
Fresh pineapple, chicken stir fry. Serve this quick tasty chicken over rice for a colorful meal.
1 pound boneless, skinless chicken (thighs or breast)
1 tablespoon peanut oil 1 large bell pepper 1 large onion, chopped 2 cups fresh pineapple, cubed 2 tablespoons rice vinegar |
1/2 teaspoon freshly grated ginger
2 tablespoons low-sodium soy sauce 1/4 teaspoon crushed red pepper flakes 1 tablespoon cornstarch+ 1 tablespoon water, dissolved 1/4 cup water |
- Cut chicken and bell pepper into 1/2-inch pieces.
- In a small bowl, combine vinegar, soy sauce, ginger and red pepper flakes.
- Heat oil in a wok or large skillet. Stir fry chicken with sauce about 2-3 minutes.
- Remove chicken and set aside.
- Stir fry, bell peppers and onions stir fry about 4 minutes.
- Add chicken and pineapple to wok.
- Pour water into wok, add cornstarch mixture and stir until thickened.
