Swiss Chard Potato Frittata

Swiss Chard Potatoes Frittata
This delightful potato crusted frittata is baked in the oven. Serve it for breakfast or add a soup or salad and make it a meal. Fresh Swiss chard from the garden or the Farmer's Market is a fabulous treat. If you do't know much about Swiss chard it is one of the most nutrient rich vegetables around.
Ingredients:
4 small potatoes, washed and thinly sliced
1 tablespoon water
2 cloves chopped garlic
1/3 cup chopped onion
1 bunch Swiss chard leaves , washed and spun dry
1 teaspoon balsamic vinegar
14 ounces firm tofu, drained
1 cup plant milk
1 tablespoon arrowroot
1/2 cup brown rice flour
2-3 tablespoon Nutritional Yeast
1/4 teaspoon crushed red peppers (optional)
salt and pepper to taste
4 small potatoes, washed and thinly sliced
1 tablespoon water

1/3 cup chopped onion
1 bunch Swiss chard leaves , washed and spun dry
1 teaspoon balsamic vinegar
14 ounces firm tofu, drained
1 cup plant milk
1 tablespoon arrowroot
1/2 cup brown rice flour
2-3 tablespoon Nutritional Yeast
1/4 teaspoon crushed red peppers (optional)
salt and pepper to taste
Directions:
- Pre-heat oven to 350 degrees. Generously coat a pie plate with cooking spray.
- Layer potatoes in coated pie plate. Coat top of potatoes with cooking spray.
- Cook potatoes 35-40 minutes.
- While potatoes are cooking heat a skillet over medium heat. Add 1 tablespoon water and cook 2 cloves garlic and onions 3-4 minutes or until tender.
- Slice chard leaves into 1-inch pieces. Add chard to the garlic and onion, cover, reduce heat to medium low and cook for about 5 minutes or until chard is tender. Stir in the balsamic vinegar mixing well.
- In a food processor add, tofu milk, arrowroot, brown rice flour, Nutritional yeast and optional red pepper flakes, salt and pepper. Process until smooth.
- Combine tofu mixture with chard.
- Remove potatoes when done, arrange chard mixture over potatoes and top with chard/tofu mixture.
- Bake uncovered 25-30 minutes or until cooked through.
- You can substitute spinach for the Swiss chard.
