Toasted Chickpeas (Garbanzo Beans) Serves 8

Toasted Chicpeas
These easy to make roasted chickpeas make a tasty, healthy snack. You can use one of my seasoning ideas or another popcorn type flavorings.

12 ounces cooked chickpeas (garbanzo beans)


Parmesan/Garlic Seasoning
2 tablespoons Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
salt to taste
Spicy Seasoning
1/4 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon ground cumin
1/8 teaspoon coriander
salt to taste
  1. Pre-heat oven to 400°. 
  2. Place parchment paper on rimmed baking sheet.
  3. Mix the ingredients for one of the seasoning blends.
  4. In a small bowl, mix the chickpeas and 1/2 of the blended seasoning until chickpeas are coated.
  5. Spread dried chickpeas on prepared baking sheet.   
  6. Roast for 20-25 minutes, stir.
  7. Continue roasting for additional 20 minutes or until the beans are golden brown and crunchy. (Make sure that chickpeas do not burn.) 
  8. When chickpeas are toasted, immediately toss with the rest of seasonings. 
  9. Serve hot or at room temperature. 
  •  Toasted chickpeas are best the first day, but can be kept in an airtight container for up to 4 days.
