Trail Mix Cookies makes 20
Ingredients:
1 tablespoon flax meal + 3 tablespoons water mixes, set aside
1 cup whole wheat flour
3/4 cip oats
1/4 cup brown sugar
1 tablespoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/3 cup chopped raw almonds
1/3 cup raw pepita seeds
2 tablespoons chia seeds
1/2 cup raisins
1/2 cup pumpkin
1/2 cup smooth peanut butter
2 tablespoons agave
1 teaspoon vanilla

Directions:
- Preheat oven to 350°. Line 2 baking sheets with parchment paper.
- In a large bowl mix together flour, oats, sugar, cinnamon, baking soda, baking powder, salt, almonds, pipits, chia seeds, and raisins.
- Make a well in the flour mixture, stir in the pumpkin, peanut butter, agave, and vanilla, mix well. (You can use your hands to mix)
- Scoop 2 tablespoons of mix and roll into balls.
- Place on parchment paper. Flatten the cookies and bake in preheated oven for 10 minutes. Cool 5 minutes.
- You can freeze cookies. Just thaw before eating.
