Turkey and Roasted Pepper Sandwich

Turkey and Roasted Pepper Sandwich
A nice blend of flavors make this turkey sandwich a wonderful alternative to the classic turkey sandwich.
This would also make a great pita sandwich.

2 red bell peppers
1 teaspoon olive oil
4 ounces non-fat cream cheese
2 cloves minced garlic
3 tablespoons chopped fresh chives
8 slices whole wheat bread
8 ounces turkey
1/2 cucumber, peeled and sliced
sprouts
  1. Coat peppers with olive oil. 
  2. Cook under broiler, turning until each side is charred. (Watch very closely so the peppers don't burn.)
  3. Place roasted peppers in a paper bag for 20 minutes, peel the skin off and slice. (You can also place peppers in a bowl and cover tightly with plastic wrap.)
  4. In a small bowl mix the cream cheese, garlic and chives. Set aside.
  5. Spread 1/8 of the cream cheese mixture on each side of the wheat bread.
  6. Layer the turkey, cucumber and sprouts on one slice of cream cheese coated bread. Top with another slice of bread.
