Turkey and Roasted Pepper Sandwich
A nice blend of flavors make this turkey sandwich a wonderful alternative to the classic turkey sandwich.
This would also make a great pita sandwich.

2 red bell peppers
1 teaspoon olive oil 4 ounces non-fat cream cheese 2 cloves minced garlic 3 tablespoons chopped fresh chives |
8 slices whole wheat bread
8 ounces turkey 1/2 cucumber, peeled and sliced sprouts |
- Coat peppers with olive oil.
- Cook under broiler, turning until each side is charred. (Watch very closely so the peppers don't burn.)
- Place roasted peppers in a paper bag for 20 minutes, peel the skin off and slice. (You can also place peppers in a bowl and cover tightly with plastic wrap.)
- In a small bowl mix the cream cheese, garlic and chives. Set aside.
- Spread 1/8 of the cream cheese mixture on each side of the wheat bread.
- Layer the turkey, cucumber and sprouts on one slice of cream cheese coated bread. Top with another slice of bread.
