Waffles
4 waffles

These homemade waffles are light and slightly sweet. There's no need for syrup, just serve with ripe fresh fruit and enjoy.

2 cups flour
2 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon salt
1-1/2 cups low fat milk
2 eggs, slightly scrambled
2 teaspoons vanilla 
  1. In  a medium size bowl, mix flour, sugar, baking powder and salt.
  2. Make a well in the middle of the flour mixture. 
  3. Pour milk, eggs and vanilla into well.
  4. Stir until mixture is well combined, but a little lumpy.
  5. Heat waffle iron until hot, coat with cooking spray and pour 1/2 cup of waffle mixture onto hot waffle iron.
  6. Cook according to waffle iron instructions. (Mine takes about 4-5 minutes.)
