Wild Rice, Spinach and Mushrooms

Wild Rice, Spinach and Mushrooms
Wonderful side dish for any special occasion.
1/2 cup wild rice
1/2 cup brown rice 1/2 cup onion, chopped 2 cloves garlic, minced |
1 cup sliced mushrooms
3 cups chopped fresh spinach 1 teaspoon fresh thyme 1/4 cup shredded Parmesan cheese or nutritional yeast (optional) |
- In medium size saucepan, boil water.
- Cook both wild and brown rice until tender, about 45-50 minutes. Set aside.
- Heat a large saucepan over medium heat.
- Add 2-3 tablespoons water, cook onion until soft, about 2-3 minutes.
- Add the garlic and cook 1 minute more. Then add mushrooms and spinach.
- Reduce heat to low, cover pan and cook stirring frequently until spinach and mushrooms are very tender, about 15 minutes.
- Add the cooked rice, thyme and Parmesan cheese stir well.
- Heat until warm.
