Wild Rice, Spinach and Mushrooms

Wild Rice, Mushrooms and Spinach Picture
Wild Rice, Spinach and Mushrooms
Wonderful side dish for any special occasion.

1/2 cup wild rice
1/2 cup brown rice
1/2 cup onion, chopped
2 cloves garlic, minced
1 cup sliced mushrooms
3 cups chopped fresh spinach
1 teaspoon fresh thyme
1/4 cup shredded Parmesan cheese or nutritional yeast (optional)
  1. In medium size saucepan, boil water.
  2. Cook both wild and brown rice until tender, about 45-50 minutes. Set aside.
  3. Heat a large saucepan over medium heat.
  4. Add 2-3 tablespoons water, cook onion until soft, about 2-3 minutes. 
  5. Add the garlic and cook 1 minute more. Then add mushrooms and spinach. 
  6. Reduce heat to low, cover pan and cook stirring frequently until spinach and mushrooms are very tender, about 15 minutes.
  7. Add the cooked rice, thyme and Parmesan cheese stir well.
  8. Heat until warm.
