Wild Rice, Almonds and Wild Mushrooms
Feel good about serving this healthy comfort food for dinner. This rice side dish will go with most roasted, baked are grilled meat, chicken or fish.
1 cups wild rice
4 cups water 5 ounces dried wild mushrooms + 1 cup hot water |
1/2 tablespoon marsala
1/4 cup chopped almonds 2 tablespoons chopped fresh flat leaf parsley |
- Bring 8 cups water to boil in large pot.
- Boil rice for 45 minutes with the cover off.
- While rice is boiling, reconstitute the mushrooms by pouring 1 cup hot water into a small bowl, add mushrooms and marsala.
- Allow mushrooms to soak for 30 minutes.
- Drain the rice when it is finished (it should be tender but chewy).
- Place rice, mushrooms, almonds and parsley into a serving bowl.
- Stir well, cover and let sit for 10 minutes before serving.
