Zucchini Fritters
Serve these delightful zucchini fritters as a side dish to go along with most entrees.
1 pound zucchini, shredded
3/4 cup onion, shredded 1/3 cup flour 1 egg 2 tablespoons canola or olive oil |
- Squeeze the excess water out of the grated onion and zucchini.
- In a large bowl, combine zucchini, flour and egg.
- Heat oil in a frying pan over medium-high heat.
- Drop spoonfulls of zucchini mixture into the oil, press down with a spatula.
- Fry fritters 5-7 minutes per side.
- When frying the rest of the fritters add more oil as necessary.
- Arrange cooked fritters on paper towels.
- Season with salt if desired.
