Zucchini Fritters serve 4

Zucchini Fritters
Serve these delightful zucchini fritters as a side dish to go along with most entrees.

1 pound zucchini, shredded
3/4 cup onion, shredded
1/3 cup flour
1 egg
2 tablespoons canola or olive oil
  1. Squeeze the excess water out of the grated onion and zucchini. 
  2. In a large bowl, combine zucchini, flour and egg.
  3. Heat oil in a frying pan over medium-high heat. 
  4. Drop spoonfulls of zucchini mixture into the oil, press down with a spatula.
  5. Fry fritters 5-7 minutes per side. 
  6. When frying the rest of the fritters add more oil as necessary.
  7. Arrange cooked fritters on paper towels. 
  8. Season with salt if desired.
